Cooking Guidelines	Preheat the oven to 200° C (400° F - gas 6), score the rind/fat with sharp knife and rub in seasonings and herbs, roast in center of oven for 25 minutes then reduce heat to 180° C (350° F - gas 4) and cook for 40minutes then a further 40 minutes per kg
