Normally we supply lemon sole as whole fish or filleted with either skin on or skin off. Lemon sole can also be supplied with the head and fins trimmed but still “on the bone”. It has delicate, sweet white flesh and is best cooked simply, either grilled or fried, and served with a light sauce.
